The taste of pies stuffed with green onions and eggs has been familiar to everyone since childhood. And cooking them is easy. However, despite this, achieving the desired taste is not as easy as it might seem at first. After all, it largely depends not only on the filling, but also on the test. Below you will find several recipes for making both toppings and pastry dough.

Standard recipe for toppings for pies: onions and eggs

Required Products:

  • chicken eggs - 6 pcs.;
  • green onions - 350 g (about 2-3 bunches);
  • salt, pepper to taste;
  • sunflower oil - 2 tablespoons.

Stages of cooking:

  1. Lay the eggs on the bottom of the pan, pour water on top and put on fire. Important: you should not use hot water for cooking cold eggs (from the refrigerator), because in this case they will burst. Salt water by adding a teaspoon of salt. After boiling, cook eggs for 10 minutes, that is, hard boiled.
  2. While the eggs are boiling, you can do the onion preparation. It needs to be sorted, cut off the heads, if any, rinse and cut.
  3. Meanwhile, the eggs have already been cooked. Pull them into a cup of cold water and leave to cool completely. Then peel them and cut them into cubes.
  4. Pour sunflower oil into a pan and put on fire. After warming the oil, add onion to it for literally a few seconds, season to taste and remove from heat. Pay attention, if you overdo it on a fire, it will lose color and sharpness.
  5. After combining the eggs with the onions in a bowl, mix everything well.

That's all, the onion and egg filling according to the standard recipe is ready. The pies with it are very tasty.

Unusual filling for pies: onions, eggs and rice

Ingredients:

  • boiled rice - 280 g;
  • chicken eggs - 4 pcs.;
  • sunflower oil - 2 tablespoons .;
  • onion feathers - 1 bunch;
  • salt to taste.

Stages of preparation:

  1. Lay the eggs on the bottom of the pan and completely fill with water. Salt the water, put the pan on the fire. The eggs need to be boiled hard, that is, after boiling, they should cook for 10 minutes.
  2. Prepare the onions during the cooking of the eggs. Go through it by removing wilted areas and cutting off the heads. Chop the remaining onion.
  3. If you do not have ready-made rice, boil it. Important: you need to cook rice in a pan with a thick bottom.
  4. After the eggs have boiled, transfer them from hot water to cold. So they cool faster and easier to clear from the shell. Chopped eggshells and mix with other ingredients. Try the filling and, if necessary, add salt.
  5. To prevent the filling from becoming too dry, add sunflower oil to it and mix well.

The filling is ready for use as intended. The pies with it are tasty and satisfying.

Original filling for pies: onions, eggs and potatoes

Ingredients:

  • potatoes - 400 g;
  • chicken eggs - 3 pcs.;
  • salt to taste;
  • butter - 40 g;
  • milk - ½ tbsp .;
  • greens;
  • sunflower oil - 2 tablespoons.

Cooking:

  1. To start, prepare mashed potatoes. To do this, it must be peeled, washed and boiled. At the same time, do not forget to salt it. Once the potatoes are boiled, drain the water. After adding butter and milk to the potatoes, prepare mashed potatoes.
  2. Boil the eggs hard, then set aside to cool.
  3. Rinse the greens, peel the cooled eggs, then crumble.
  4. Next, mix mashed potatoes, eggs and herbs. Try the filling and, if necessary, salt. To make the filling juicier, add sunflower oil to it.

You can add a little tomato or ketchup to the filling. This will give her an unusual taste.

The taste of the pies is significantly affected by the cooking method and the dough used for this. Here are two basic recipes for making dough, one of which is suitable for fried pies, and the other for baked pastries.

Shortcrust pastry recipe

Required Products:

  • 4 tbsp. flour;
  • 300 g margarine;
  • 2 chicken eggs;
  • 3 tablespoons of sugar;
  • salt to taste.

Cooking steps:

  1. For the dough, first mix the eggs, sugar, salt and margarine in a bowl. Margarine in the recipe can be replaced with butter. In this case, it is not necessary to melt it.
  2. The dough is almost ready, but it is quite liquid. Add flour to it and knead well. The dough is considered ready when it easily moves away from the hands. However, do not knead it too much, it should remain soft.
  3. Form a ball from the dough and leave for 20 minutes.

Such pies are cooked in the oven quite quickly - in just 20 minutes.

Patty Yeast Dough Recipe

Ingredients:

  • 800 g of flour;
  • salt to taste;
  • 2/3 tablespoon sugar;
  • a small pack of yeast;
  • 400 g of milk;
  • 2 tablespoons of sunflower oil;
  • 2 chicken eggs.

Cooking:

  1. To prepare the dough, take a capacious dish, pour milk into it and heat it. In warm milk, yeast will act faster. Next, add the remaining liquid and bulk products (except flour). It is added to the dough last.
  2. Add flour to the dough gradually. At the same time, it is better to knead it first with a spoon, since at first it will be very liquid and sticky.
  3. Then, when all the flour has been poured into the dough, knead it with your hands. The dough will turn out slightly sticky: do not be alarmed, it should be so. Do not add too much flour, because then the dough will turn out too steep. After kneading the dough well, put it back in a bowl to raise. This takes about 60-90 minutes.
  4. As soon as the dough rises, it is ready to use.

If you didn’t use everything at one time, you can put the rest in a bag and put it in the freezer for storage.

Yeast dough is perfect not only for frying pies, but also for baking.
